The Whitstable Shellfish Company operates from our own approved depuration
and despatch centre, No. KE009, although we source all our shellfish from
category "A" waters where possible, for peace of mind all our shellfish go
through the purification cycle before going to market.
Scottish Rock Oysters
Our Rock Oysters are grown on the west coast of Scotland, just north of Oban,
in Loch Creran. Harvested and shipped on the same day via chilled transport,
they reach Whitstable early the following morning. Upon arrival the oysters are
transferred to our sea water holding / purification tanks, where they are rested
and refreshed before being despatched to our customers in prime condition.
Whitstable Native Oysters
We fish the Whitstable Native Oyster with our own fishing vessel, out of
Whitstable Harbour, on the ancient oyster bed of the free fishery which are
classed as category "A" waters. Landed back at Whitstable Harbour the oysters
are cleaned and graded before being put into our tanks. Once the purification
cycle has competed, 42 hours, the oysters are well rested and refreshed and a
quality product is ready for despatch in prime condition to our customers.
Purification / Holding Units
The purification units we use are based on the vertical stack system developed
by The Sea Fish Industry Authority and the Ministry for Agriculture, Fisheries and
Food. Through our use of this system we have been able to refine it's design and
are in a position to supply either a standard unit, or a system built to meet your
requirements. The standard unit is a self contained, space saving, purification unit
which you just fill with water and the relevant shellfish, plug in and it is operating.
Suitable for oysters, clams, cockles and mussels etc. We will be adding more
