SCOTTISH ROCK OYSTERS
Scottish Rock Oysters (or Pacific Oysters, originate from the Pacific Ocean)
are bred in a hatchery. Cultivated to maturity over three years in sea lochs
on the remote west coast of Scotland, nourished by the clean warm waters
of the deep Atlantic Ocean and freshened by sparkling mountain burn waters,
these oysters are of excellent quality.
Although cultivated, the oysters feed naturally form the abundance of rich
algae which is found off the Scottish Highlands west coast, ensuring a
plump succulent oyster all year round.
Shipped via chilled transport from Scotland to our sea water holding tanks
in Whitstable, where the latest technology in shellfish storage and handling
is use to maintain the oysters in prime condition.
A taste of history, this is the oyster Whitstable is famous for, mentioned
by Dickens and included in Mrs. Beaton's recipes, now available delivered
to your door.
Fished from the historic Whitstable oyster beds which have a history
stretching back beyond the Romans, where the the Whitstable Native Oyster
still grows wild. A one time common place oyster, but now due to various environmental and economic influences, a comparatively scarce species.
Taking an average of five years to maturity, these oysters are slowly
making a come back. Fished by our own boat and landed in Whitstable
Harbour, they are available from September through to the end of April,
offering you the opportunity to sample their unique flavour.
